For Valentine’s Day I wanted to make a quick but delicious treat for my family. One family favorite are the Chex party mixes so I though a Valentine’s Day inspired version would be perfect.

Red Velvet Chex Party Mix Recipe

To help me put together my Valentine’s Day Party Mix, The Chex Cereal brand generously sent me a package of items to recreate their Red Velvet Chex Party Mix recipe.

Red Velvet Chex® Party Mix
A delicious Chex® party mix reminiscent of red velvet cake.

Prep Time:10 min
Start to Finish:15 min
Makes:12 servings (1/2 cup each)


Ingredients
6 cups Chocolate Chex® cereal
1/2 cup packed brown sugar
1/3 cup butter
3 tablespoons corn syrup
1 drop red gel food color
1 cup Betty Crocker® Gluten Free devil's food cake mix
1/2 cup Betty Crocker® Rich & Creamy cream cheese frosting


Preparation Directions
  1. In large microwavable bowl, place cereal; set aside. In medium microwavable bowl, microwave brown sugar, butter, corn syrup, food color and cake mix uncovered on High 2 to 2 1/2 minutes or until mixture is boiling. Immediately pour over cereal; toss until well coated.
  2. Spread on waxed paper. Cool 5 minutes.
  3. In small microwavable bowl, place frosting; microwave uncovered on High 20 seconds. Drizzle over cereal mixture. Store loosely covered.

I was really excited to recreate the Red Velvet Chex Party Mix and went to the supermarket to pick up the items. Ironically my supermarket didn't have the Chocolate Chex® cereal. Matter of fact none of the 3 supermarkets in my area had it. How was the even possible?!

Since I couldn't find the Chocolate Chex cereal, I decided to substitute with the Honey Nut Chex. Nothing wrong with a little experimenting right?

After getting my items I returned home to start making the Red Velvet Chex Party Mix. As I take out all the ingredients, my son decided to be my "helper". This would have been a nice idea if his version of "helping" didn't mean eating out the Chex cereal!

After giving him some cereal to enjoy. I quickly started making the recipe with the rest of the cereal.

For some reason my version of the Red Velvet Chex® Party Mix didn't come out exactly like the recipe showed. But it was still a fun treat to make. As soon as I find Chocolate Chex® cereal, I'm going to try making this recipe again.
