Recipe: Veggie Wraps with Honey & Avocado Dressing

Fitness and wellness expert Bárbara Trujillo Gómez and the National Honey Board (NHB) recently shared a new honeylicious menu that will give kids the all-natural energy they need to get back into school mode!

Veggie Wraps with Honey and Avocado Dressing Recipe

"Like a lot of parents, I have a very busy schedule, so for me it's important to make sure that my kids' lunches and snacks are easy to put together without sacrificing quality; that's why I use honey in all of my favorite (and their favorite!) recipes to give them a boost of natural energy," says Bárbara.

With the goal of packing something that would satisfy and be light enough to keep from needing a nap after lunch, Bárbara come up with 7 energy-packed honey recipes that emphasizes simplicity and taste. The menu combines honey with vegetables and fruits in fun, creative ways like this Veggie Wrap with Honey and Avocado Dressing.


Veggie Wraps with Honey- Avocado Dressing

Makes 4 wraps

Ingredients:

2 tbsp honey
½ of 1 avocado, chopped
Juice of 1 lemon
2 tsp fresh minced garlic
2 tbsp light mayonnaise
4 whole wheat tortillas
1 sweet red pepper, sliced into strips
½ of 1 cucumber, thinly sliced
1 large shredded carrot
1 tomato, sliced
¼ of 1 red onion, sliced
3 cups of chopped romaine lettuce
Salt

Preparation:

In a blender, combine honey, avocado, lemon juice, garlic and mayonnaise. Blend until smooth. Lay the tortillas flat and spread the honey- avocado dressing evenly on each one. Layer the veggies evenly in the center of each. Sprinkle each with a pinch of salt, roll the tortillas and serve.
